Is it just me or do you ever get a craving for a rich chocolate cake or brownie, but don’t want to put in all the time or effort to make a whole dang cake?
For one thing, by the time I finish prepping the cake and get it in the oven, my craving may be gone at that point because I’ve eaten so much batter (oops, haha).
Secondly, as someone who is really trying to watch what they eat, I don’t particularly want a whole cake sitting around. I have almost no self-control. I mean… it can’t go to waste am I right!?
Enter the mug cake! The PERFECT solution. I have shared one version on my Instagram already but this one is different because it is gluten-free and uses no refined sugar. Don’t worry though because it is rich, super chocolatey and just as satisfying as any chocolate cake or brownie you would crave. Speaking of which, I would describe this mug cake as a cake brownie hybrid in the best way possible.
Here’s how simple it is to create this masterpiece.
Mix all dry ingredients together:
- 4 teaspoons almond flour
- 3 teaspoons dark chocolate cocoa powder
- 1/2 teaspoon baking powder
- pinch of salt
Add in the wet ingredients and mix with a fork until completely combined:
- 1 teaspoon almond milk (or any other milk of choice)
- 1 1/2 teaspoons maple syrup
- 1 teaspoon oil
- 1/4 teaspoon vanilla
Fold in a few sprinkles of chocolate chips.
Microwave for 30 seconds on high. Let cool slightly so you don’t burn your tongue like crazy!
This is great with your favorite bottle of red or dessert wine, just sayin’ 🙂
