Favorite French Toast!

Breakfast for dinner is one of our favorite quick and easy meals.

Does your family enjoy an Easter brunch? This should be on the menu! Mimosas are the perfect companion to this dish 😉

French toast is always a winner with the whole family. Our picky eater, Adele, gobbles it up every time!

I have tried many different ways of making french toast, but this recipe makes for the best custard-like center with a buttery crisp outside with the right amount of cinnamony (yeah that’s a word now :P) goodness!

The small amount of flour and sugar is what makes this french toast stand apart. It creates a thin batter which is what makes the magical warm custard center and the crispy outside.

You can whisk the ingredients together or throw everything in a blender to completely combine and rid you batter of all lumps. Don’t worry though, if you whisk it and you have some lumps it still turns out delicious!

Let’s start with the bread! It’s very important to pick the right one. If you pick the run of the mill sliced bread you will be highly disappointed. Pick the thickest you can find. Below are a couple of my favorites to use. Brioche makes for a slightly sweeter result, so keep that in mind.

I said this is quick and easy and I meant it! You can combine your ingredients in two different ways. But before we move on, make sure you have your griddle or skillet preheating!

The first is the traditional way of hand whisking until combined. You will still have some lumps unless you want to be whisking your arm off for quite a while. The lumps are ok though! It will taste just as fantastic without them!

The second method, and also my favorite, is throwing everything into a blender and giving it a good whirl. I usually have to scrape the sides once to make sure there is no flour/sugar stuck to the side. This way you get a completely smooth batter.

Blended to perfection. It will be foamy, but that won’t affect the end result at all.

Time to dip that bread into the batter! If you know anything about french toast, then you know the more stale the bread the better. This does work with fresh bread, but you need to make sure to soak each piece thoroughly to get the batter completely soaked through so that delectable custard center can be achieved.

Melt butter evenly onto the griddle before placing the slices on to cook. Cook the bread for a few minutes until browned and then flip! Serve hot with your favorite toppings (and a mimosa ;))

Favorite French Toast

This french toast has the perfect custard center and crispy outside thanks to the special batter mix it is soaked in.

Ingredients

  • 4 large eggs
  • cup milk (any kind)
  • ¼ cup flour
  • cup sugar
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract (mexican vanilla is best!)
  • 8 thick slices bread

Instructions

  • Preheat griddle to 350 degrees F or or heat a skillet over medium heat. Grease well with butter.
  • Add all ingredients, except the bread, to a blender or to a shallow dish and whisk well to combine. If whisking by hand, it's okay if the flour doesn't mix in completely smooth.
  • Dip bread slices into the egg mixture, dredging them well on both sides until soaked through, and place on hot, greased griddle or skillet.
  • Cook for a few minutes, until the bottom of the breads starts to get golden brown. Flip and cook on the other side the same.
  • Remove to a plate. Serve warm, with syrup or any of your favorite toppings!
