Easy Peasy Pork Chop Dinner

It’s almost pumpkin spice season! ๐Ÿ˜€ It is still pretty hectic here. Trying to get in a rhythm so that I have continuous content for you guys.

Have you ever looked at a recipe and thought, there is no way that is all I need to make this? If you haven’t then you are about to experience that feeling. There are really only three, yes you read that right, THREE key ingredients to this dinner. Pork chops, applesauce, and stuffing.

The original recipe doesn’t even call for seasoning the pork at all, but I added that step myself. You can use store bought applesauce or apple pie filling. I think there’s nothing like smelling something cooking in the crockpot for hours so I opted to make my own applesauce. It also makes me feel like Fall is in the air when I get a whiff of it cooking even though it is still EXTREMELY hot outside since it’s Florida…

I have yet to try this recipe with store-bought applesauce. Both times I have made it I have used my own that I made in the crockpot. I should really think about investing in an apple corer; it would make my life MUCH easier. It seems to me that the regular applesauce that you can buy in a jar may make this dinner too runny/watery. I don’t know this for sure, but I will have to try it out to be certain. Chunky applesauce is the best anyway ๐Ÿ™‚

Once again I did not take many pictures while I made this meal… although there aren’t many steps so I am not missing much this time. I will update my posts though when I get my life together more; AKA when I don’t have a baby attached to me 24/7 ๐Ÿ˜›

To make this ridiculously easy dish start by setting your oven to 375 degrees and greasing a baking dish.

Lay out your chops in a single layer and season as desired. I used a mixture of my favorite spices from The Spice & Tea Exchange. We have a collection of their different spice combinations. Check out their website to find a store near you. You won’t be able to walk out of the store without buying something, I promise. The smells alone will sell something to you. I’m getting off track here…

Next, spoon your applesauce over the pork chops. I just eyeballed how much I wanted over my chops, but it should be around 2 cups. Follow the applesauce with prepared stuffing, cover with foil and bake for 30 minutes. Uncover and bake for another 10 minutes or until pork is done.

We dug into our dinner so fast that I forgot to take a picture before it was almost gone. Here is the best I could do. Oops, haha.

I have used the same applesauce recipe for a little while now and it is delicious! With fall being here (well sort of for us) I know I will be experimenting with different apple recipes. I will be trying to make a different applesauce recipe without the refined sugar. When I have found my favorite way to do that I will let you all know!

For this crockpot applesauce I used honeycrisp apples. You may use a different kind of apple, but you may have to adjust the sugar depending on the sweetness of the apple.

The first thing to do is peel and core your apples and cut them into fourths.

Put the fourths in the crock pot and toss with lemon juice. Then add cinnamon and sugar and toss to coat. Next, add in water. Cover with the lid and cook three to four hours. The apples should be soft enough that when you begin to stir the pot they start to mash up.

This is sooo good warm over ice-cream!!

Ingredients

  • 4-6 boneless pork chops
  • 2 cups applesauce
  • 1 package prepared stuffing

Instructions

  • Heat oven to 375 degrees. Grease a baking dish. Place pork chops in the dish. Season with favorite spices if desired. Spoon applesauce over pork chops and follow with prepared stuffing.
  • Cover with foil and bake for 30 minutes. Uncover and continue to bake for 10 minutes or until pork is done.

Notes

You may use homemade applesauce (this is the way I made it) or a can of apple pie filling.ย 

Crock Pot Applesauce

Homemade applesauce is the perfect way to make your home smell like fall!

Ingredients

  • 12 honeycrisp apples
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/2 cup water
  • 1 Tbsp. lemon juice

Instructions

  • Peel and core apples. Cut into fourths and place in crock pot. Toss apples in lemon juice and then add in sugar and cinnamon, stirring to combine. Add in water.
  • Cover with crock pot lid. Cook on HIGH for 3-4 hours, until apples are very softened. Eat immediately or store in a sealed container in the refrigerator. Enjoy!

Notes

You may use a different kind of apple, but you may want to adjust the amount of sugar depending on the sweetness of the apple used.
